Cook Tilapia In Mushroom Sauce

Fresh mushrooms add flavor and texture to a creamy sauce for fish.


Mild white fish like tilapia pairs well with creamy mushroom sauce. Make the sauce from scratch with fresh mushrooms from your local farmer's market or the grocery store. Use white mushrooms for a light, mild-tasting sauce, or baby portobellos for a richer, earthier mushroom flavor -- but don't use canned mushrooms. If you can't find fresh mushrooms, use dried mushrooms, available at Asian markets; to reconstitute, soak them in water for 20 minutes, then use like fresh mushrooms.


Instructions


1. Melt 1 tbsp. butter in a frying pan with the basil. Saute the tilapia fillets until the flesh becomes opaque white and flakes with a fork, about five minutes. You may need to cook the fish in two batches.


2. Heat a second frying pan to medium while you cook the fish. Melt 2 tbsp. butter in the pan. Saute the onion and mushrooms until the liquid cooks out and they become soft.


3. Pour the heavy cream over the mushroom mixture, stirring constantly. Heat on medium-low until the sauce thickens slightly. Season with salt and pepper to taste.








4. Place the tilapia on serving plates. Top with the mushroom sauce.
