Molded chocolate has more appeal than a simple chocolate bar and makes much more of an impression. Making chocolate candy in a mold is one of the more simple candy-making projects you can do, as well as one of the easiest to get professional-looking results from. The key is to purchase molds made especially for chocolate candy and to get high-quality chocolate. With those two elements and some patience, you'll be able to make beautiful chocolate candies in no time at all.
Instructions
1. Clean and dry the molds, checking them for any scratches or other damage. Chocolate molds don't need any special preparation, but they must be absolutely clean, dry and without damage for your chocolate to turn out well.
2. Melt the chocolate either in a microwave or a double boiler. To melt it in a microwave, break up the chocolate and place the pieces in a bowl. Microwave for 1 minute, stir and repeat until the chocolate is fully melted. To melt it in a double boiler, add a small amount of water to the bottom pan over low heat. Add the broken pieces of chocolate to the top pan and stir constantly until it's melted.
3. Pour the melted chocolate into a plastic bag, preferably with a zip top so you don't accidentally spill it. Cut a corner off the end of the bag.
4. Squeeze the melted chocolate from the bag into the molds, filling the molds all the way to the top. Remove any trapped air by lightly tapping the molds on your work surface.
5. Put the filled molds in the freezer to cool for at least 15 minutes. Check your chocolate to see if it has released from the mold. If not, return the chocolates to the freezer for another 10 minutes.
6. Cover your work space with parchment paper. Remove the chocolate from the molds by placing the molds upside-down and lightly tapping them. The chocolate candy should slide out. If it doesn't, the chocolate probably isn't set, so return it to the freezer.
