Make Hawaiian Haystack

Hawaiian Haystacks, also called chicken sundaes, start with a bed of rice covered in a chicken gravy. What's piled on the haystack is up to you. Traditionally, toppings include Hawaiian style ingredients such as coconut and pineapple. Chinese noodles usually top off the stack, giving the dish a hay-like appearance. Hawaiian Haystacks are a staple of Utah cuisine and are often served buffet-style so that the eater can choose the toppings, though it can also be a plated dish.


Instructions


1. Combine the cream of chicken soup and the chicken broth in a pot and heat, stirring well. Cook rice according to the instructions on the package.


2. Add the cooked diced chicken to the soup and broth mixture and cook for about 10 minutes to make a gravy.








3. Spoon a serving of rice on a plate. This is the base of the haystack.








4. Cover the rice with the chicken gravy.


5. Layer your choice of ingredients on top of the gravy to make your haystack.
