Make Chipotle Seasoning

Chipotle seasoning adds a zesty, smoky taste to any dish. The main flavor from this spice mixture comes from the smoked, dried jalapeno peppers, known as chipotle. Don't worry about the mixture having too much heat -- for those with sensitive palates, simply sprinkle less into recipes. You can purchase both the dried and powdered versions of chipotles from spice vendors and grocery stores.


Instructions


1. Place the cumin seed, chipotle and oregano into the coffee grinder or the mortar.


2. Pulse the mixture in several short bursts until the chipotle and cumin seeds have broken into small bits. Crush the mixture in the mortar with the pestle if not using the coffee grinder. Do not worry about grinding the mixture finely at this point.








3. Add the remaining ingredients and pulse in the coffee grinder or crush with the pestle until a fine powder forms.








4. Pour the spice mixture into the airtight container and store in a cool, dark and dry spot for up to four months.
